Brazo De Mercedes

oh well.. nagtry kami magbake magpinsan ng brazo de mercedes for her mom's birthday.. huwahahahahahha..

Ingredients

for the filling

5 cups of milk (we used angel's evap)
1 cup sugar
2 tablespoons unsalted butter
1 tablespoon vanilla extract
8 egg yolks
1/4 cup grounded cashew (optional)



Directions

In a saucepan, simmer milk over low heat until reduced to 2 cups. Add sugar, butter and vanilla, stirring all the while. Remove from heat. Beat egg yolk in mixing bowl. To egg yolks, gradually add milk mixture buy spoonfuls, beating all the while. Stir well to avoid curdling. Continue cooking entire mixture over low heat until like paste. Set aside

for the meringue

10 egg whites
1 cup sugar
1 teaspoon vanilla extract



Directions

Preheat oven to 400 F (200 C). Beat egg whites until stiff. Gradually add 1 cup sugar. Beating continuously. Stir in vanilla. 



Spread meringue over cookie sheet and bake until brown.



 Spread filling on top of the meringue and roll into log. Brush with butter and brown again in oven. 


we didn't get the perfect shape but honestly, it was so delicious. The leche flan like filling and soft meringue.. so sweet so nice ^____^ plus lots of laugh makes it perfect ^___^

Chocolate Crinkles

For the longest time, i've been wanting to make my own chocolate crinkles ^___^ so before pa ako maging busy ng bonggang bongga, gumawa na ako


Here's the recipe that i followed in making dis super mouth watering chocolate crinkles

Ingredients:
2 cups of sugar (20php)
3 cups of all-purpose flour (45php)
2 1/2 teaspoons of baking powder (10php for whole pack)
1 1/4 cups of cocoa (hershey's 242php- in sari-sari store unlabelled 25php)
1/2 teaspoon of salt
3/4 cup of oil (canola, vegetable or corn oil) (20php)
4 eggs (20php)
2 teaspoons of vanilla extract (10php for 60ml bottle)

estimated expense: 
using hershey's cocoa - 367php
using unlabelled cocoa - 150php



Directions
1. Mix together the cocoa, white sugar and vegetable oil. Beat in eggs one at a time, then stir in the vanilla. Combine the flour, baking powder and salt; Stir into the cocoa mixture. Cover the dough, and chill for at least 4 hours. 




2. Preheat oven to 350 degrees F (175 degrees C). Roll dough into one inch ball or the size that you want. Coat each ball with confectioners' sugar before placing in the cookie sheets. 



3. Bake in the preheated oven for 10 to 12 minutes. Trasfer the cookies in cooling rack.. 







I just observe, if you like a hard cookie crinkles, maximize the 10 minutes. If you want it a little moist and soft, once the crack appears, remove it from the oven, most likely 3-5 minutes.

So that's it ^___^  You can spinkle more confectioners' sugar if you want. Enjoy

PIZZA: Home made cheezy hawaiian pizza


I have tried making Pizza yesterday and hmmmm pede na din.. as for the ingredients hahahah anything lols and importante lang naman ay ang crust, tomato sauce and graded mozzarella cheese. 



then you can add any flavor you like.. in my case, I added pineapple chunks making it with a touch if hawaiian style and I also added Onion rings and Bell pepper making it Veggie lover. I add also ground meat to make it meaty and more cheese to make it cheesy ^___^ 



place it in a pre-heated oven (temp. and time depends on your crust whether if its thin or thick) YUMMY ^__^






NMA (Norwegian Missonary Alliance) Scholar Ako!

As I have posted recently in Study: my UPS and DOWN, well parang one will say that I am from a well off family. Hinde no! From my Kinder to College (take note:to College) I was one of the poster recipient of NMA. Pero di naman kmi poor hahahhaah..

What about this NMA? Norwegian Missionary Alliance as far as I know is a group of Christian Norway Nationals that sends financial assistance to Filipino Students. Every enrollment from Preparatory to Tertiary level of Education, the Alliance provides for the fees in school, uniforms, notebooks, bags, pens and other school supplies that a student needed. I don't know if the Alliance has the same system but during my time, that's how it goes. Its kinda scholarship grant because the recipient has to maintain his grades while studying AND (there's a BIG AND) let the recipient attend group gatherings and activities which I love the most because since the Poster Parents (the Norwegian) is a Christian, those activities mostly involves Christian fellowship, training, camping, and more of a youth connection to God. (I think the reason why the Alliance was so successful because it blesses its recipient not just financially but spiritually). It has even provided housing for some of its recipients.

I am proud that I am a product of NMA. I have met many friends during the camp, leadership training and other activities that are worth participating for. Surely I will come back to the Alliance after I finish Law School because they have been the Lord's instrument to bless many. I am very thankful to NMA. I'm praying that they will continue to help students because just like me, the Alliance made my dreams an inch to reach. Godspeed NMA!

John 3:16 - Perfect Father





"For this is the way God loved the world: He gave his one and only Son, so that everyone who believes in him will not perish but have eternal life." -John 3:16 (NET version)

1. A father always love his children without any condition as the Lord UNCONDITIONALLY LOVE the world inspite of its sinful nature. 

2. A father is a good faithful PROVIDER, it doesn't always concerns money but it includes time, emotion and everything that he can give just as the Lord gave His one and only son. He should never miss any opportunity to spend time with his children. 

3. EXPECTANCY - A father gives but expects his children to be responsible. He gave his son a sense of responsibility, just as the Lord gave His one and only son but expect The world to believe in him. 

A father let his children know that what he give is a product of his hard-work so they know how to value it. 

4. A father prepare for his child's FUTURE -


Note: that a father were once a child and if he experienced lapses of his father, he should take it as a challenge to do better for his future family

Study: my UPS and DOWN

I started studying since 1992 as Kinder. After that starter school (syempre with flying colors), my mom planned to enroll me to grade 1, but since I was just 6 yrs. old, i was not admitted because during that time the age required to enter grade 1 is atleast 7yrs. old. Although I have some classmates younger were admitted.. well.. and so, napilitan si mama i-enroll ako to Kinder 2 in 1993.

In 1994 to 2000, I was in the primary level. To sum up my grade school, I cant remember some of the lessons, nursery rhymes or songs thought. what I can fully remember was that I am a Bully that time. I used to bully classmates before ahahahh. I never studied any lesson. Projects? I only had to do it for the sake of passing. but Im proud to say that ME, myself were the one who did all my projects, assignments, school requirements and the likes. Of course with seldom assistance of my guardians. but I make sure that my grades will not go down below 80 kasi naexperience ko mabugbog dahil sa 79 kong grade sa Sibika at Kultura during my grade 1 (no longer sure with the subject name lols). and since then (nung mabugbog ako) naging hate ko na ang subject na yun.. any subject related to it.. sibika, hekasi, history, social science, lahat ahahahh. at mas lumalim ang galit ko sa subject na yun nung grade 5 ako.. yung teacher ko sa subject na yun pinarusahan aq kasi madaldal daw ako ahahaha. And my favorite subject is Mathematics. Ang gusto kong kunin na course sa college ay Accountancy. I love solving problems, ako lang nga ang wala sa honor roll na sinasali ng teacher ko sa Mtop. I didn't focus on any subject but Math. Kasali rin ako sa Banda sa school yung Lyre Band. Mahilig ako sa mga extra curricular activities pero MEJO mahiyain ako dati ahahaha.

My mom and pap that time goes in and out of the country often. My mom only had to stay nung nagkaroon na kmi ng baby brother, that's in 1998.

Comes my Secondary level. Akalain mo yun nasama ako sa SOEC (Science Oriented Experimental Class) Eto yung section na mas mataas pa sa section 1. hahahah so nagkaroon ako ng self confidence. D ako nasama sa Honor roll nung 1st year (asa-ness?) but I got a special award. Best in Mathematicshahahah adik sa math? not really. Nung 2nd yr. nasungkit ko ang Second honors.. at Best in English hahahha BAKET?? Ewan ko, naging focus na aq sa study ko during my high school. Naging habit ko ang hindi kumain hanggat di ko natatapos ang mga assignments ko, I always finish projects ahead of the deadline. Naisip ko, kung gagawin lang pala ang gusto mangyari ng teachers ko e kaya naman pala mapunta sa honor roll.. I started to love studying, reading, at lagi ako sumasali sa kung ano ano. Nung 3rd yr. sumali ako sa CAT, sa ibat ibang club pati news writing competition pinasali ako kasi kulang sila ng contestant ahahhaha akalain mong nanalo pa ako.. e accidental participant lang naman ang lola mo.. at take note outside the school ang competition ha.. so sobra akong naging active nung 3rd yr. ako at tumakbo akong presidente sa student council.. Sobra akong blessed kasi nanalo ako as SGO President. Graduation sa CAT, naging ACC-G3 Operations ang rango ko. End of the School Year, I got 3rd Honorable Mentioned.. Busy e ehehehhe.. But my 3rd year is my most memorable year in high school.. So comes my 4th yr, the last year of stay sa school, I joined different clubs, I became the President of Filipino Club, Values Club, Computer Club hanggang sa pina-ban na ako sa ibang club cause madami na nga daw akong hawak.. it so happens pa na School President ako at CAT Officer. But during those times naman, I never intended to pirate all the clubs, i just love joining. Nasanay ako na lagi akong busy at gusto ko lagi akong part. Hindi naman ako nagiging pabigat at lalong hindi ako pasikat. That what makes me happy. Kahit madami akong ginagawa sa buhay, on hand naman ako sa mga gawain.. hindi rin ako mautos or bossy (i guess) That's the time din na na-meet ko ang love of my life. He was my Co-officer sa CAT. Our Corps Commander. Actually mejo magkaaway kmi before. He is also a candidate for Leadership award but sadly, dahil madami akong org na hawak sakin napunta. I graduated in 2004. I received the Leadership Award, 4 medals for that from PGMA, Congress, Mayor, Senate, then First Honorable Mentioned. I was awarded also with Scholarship at STI for any 4yrs course. My high school life was so great at kung meron man akong gustong balik balikan, eto yun.. ohh I forgot to mention that my classmates in high school were also my classmates eversince I was in gradeschool, yung iba since Kinder pa.. kaya we already treat each other as siblings.. kaya nung graduation, super maga ang mga mata namin.. 3rd year plng kmi nagdadrama na kmi about graduation.. we really love each other.. hahaha kaya hanggang ngayon lagi kmi magkakasama.. 

So time to face college life. I finished my bachelor's degree in 2008. i took Bachelor in Political Science Major in International Relations. hahahha bakit polsci e I was addicted to Math, naisip ko to strenghten my weakest side.. during my first yr. in college, lagi ko iniisip mag-shift to accountancy dahil sobra sobra akong nahihirapan. As in wala akong kainterest interest sa Social Studies but I was torturing myself. Na-eenjoy ko lang ang subject pag related sya sa leadership, politics.. pero since 1st year, ang mga minor subjects ko e puro social science. haaayyyyyy.. nahirapan din ako sa mga exams.. masaya ako pag multiple choice, objective type pero pag essay na, I always got the lowest. Kasi sa news writing, the shorter the better so nasanay ako magsulat ng straight to the point. Well baliktad nung college ako, may mga professor na gusto mahaba ang isusulat mo.. so ayun ahhahaha..may number of words pa nga na limit minsan.. ahahaha..  4th year na ako ng tlgang masasabi kong na-enjoy ko ang polsci.. siguro dahil sa mga freinds ko.. pero sa 4 yrs ko sa college, d naman ako nagpabaya sa studies kahit ayaw ko yung course ko.. so i graduated Cum Laude

I continued my study to Law until now.. Actually, Im trying to recall if during my younger yrs. e pinangarap ko bang maging lawyer? ahahahah.. well God has a wonderful plan for me.. and I know si Lord ang naging Provider ko all through out my studies kaya Im always at my best kahit I thought it was my worst.. at alam ko na sasamahan Nya ako until my purpose is served.

Leyte Invasion

as part of my long vacation last year (2012), we went to my father's hometown.. Southern Leyte.. from Cebu, sumakay kmi ng barko around 10pm.. buti nlng may bed yung kinuha ng tita q kahit super late na kmi bumili ng ticket.. so tulog tulog sa barko.. it was my first time sa malaking barko pero d q na ninamnam ang oras na yun dahil sa pagod.. nagising kmi ng 3am kc nasa Liloan Port na pla kmi hahhaha.. from there, sinundo kmi ng pick-up ni tita Rosa.. OHEMGEE probinsyang probinsya.. walang kabahayan, kabundukan at palayan lang halos at d pa makita kc madaling araw nga wala namang street light.. that's the very first time na nakita q ang horizon end to end.. nafeel q na unfair.. iba siguro ang langit nila dito sa probinsya.. walang mapaglagyan ang STARS sa dami.. habang nasa byahe siguro mga 2hrs din yun, napakaraming falling stars.. buti nlng tlga open yung sasakyan at nakita q.. d mo na nga kailangang tumingala para makita lang kc as i have said, end to end ang horizon.. nakaka-amaze.. so yun na nga.. matagal kmi nagstay sa leyte pero i just chose photos i like much ^__^
yan ang view sa likod bahay.. those bangkeros were catching the smallest fish.. they call it Tugnos in leyte but here in manila, its Dulong.. it is so small, even smaller than alamang.. its scientific name is pandaca pigmea..

you can actually swim without paying anything.. sa mga likod bahay lng yan.. the kubo in the middle was a perfect place for relaxation but you have to be careful baka katabi mo na ang mga crabs ahahha.. sobrang rich nung water nila dito.. i did'nt bother myself to swim kc may mga seaweeds sa ilalim, sea grass, and fishes of course.. ok na aqng palusong lusong lang hehhehe 
see how clear the water is, its knee level but you can still see under.. muka lng syang dirty kc yung shore kulay brown yung rocky sand..
may pinuntahan kming bundok but i forgot what they call it.. basta maganda sa taas hehehe.. gabi na halos kmi nkapunta.. sayang nga e.. but i love the sunset here.. 

so yan ang view sa taas.. and while watching the view, you can hear "tuk-ko... tuk-ko" whoa halos lahat ng kabahayan dun may mga Tuko.. yun ang pinaka butiki nila sa bahay
first time q makakita.. shy type pla ang mga gecko.. pag nakita mo sila bigla sila magtatago.. nakakatakot actually kc ang lalaki nila than usual butiki.. they were as big as your palm..
we go boating kinabukasan..malayo na yan but the water is just waist level.. d nga lang pedeng bumaba sa boat k may mga corals.. pede ka matibo at masugatan.. see how rich their water here.. ang babaw plng ng water may mga corals na..
he was wearing crocs kaya nakababa sya ng banka.. my camera were zoomed already..after few days, we prepare naman for our next stop.. Surigao del Norte...
sa Roro kmi sumakay.. nakakaawa ang mga batang to.. they were waiting for you to throw coins at sisisirin nila yun.. haaayyy so yun.. layag na kmi..

Cebu: on my bucket list

last year, my pap decided to go back here in the Philippines and visit his relatives in Visaya and Mindanao region
and one of our first stop is Cebu... Unfortunately we didn't have so much time to explore the island.. we just go to some market and buy stuff.. went to SM (napakaraming sm dito sa manila, di na nagsawa) and roam around.. but beaching??? too sad T_T 
blessed me i was able to see Mt. Mayon while at the airplane

Puerto Galera Adventure (Tamaraw falls, Tukuran falls, Talipanan falls)

it was late summer in 2013, May 25-26, me and my high school barkada went to puerto galera.. it was memorable since it was our first "mejo malayo layong gala"


i will not into the details of our trip since it was already in my first blog.. but here's some picture we had taken

we stayed at Luca Cucina Italina and we went falls hopping (Tamaraw falls, Tukuran falls and Talipanan falls) and we went snorkeling
